  • Glad you all enjoyed the story from yesterday.  Sounds like a lot of you do silly things like that, too.  I really think that is one of the secrets of a good, long marriage.  That you have fun together—even if it is only little things like this.

    When Val, Sue and Dawn were here the other Sunday, they asked for the recipe for the casserole I made.  Said I should post it here, because they thought others might enjoy it, too.  I modified it that day for Val’s dairy-free diet, but am printing the original recipe.  For Val, instead of the cream soup, I used non-dairy creamer and instant chicken bouillion.  And only put cheese in half of the topping.  The flavor was just as good as the original recipe.


     


    HOT CHICKEN SALAD CASSEROLE


    4 cups cooked, diced chicken (I use chicken breasts)


    2 cups chopped celery


    1 onion, chopped


    1 cup mayonnaise (I use Miracle Whip Lite instead—like the stronger flavor)


    4 tsp. lemon juice


    4 chopped hard-boiled eggs


    1 can cream of chicken soup


    2 cups mixed potato chips and grated or shredded cheddar cheese


     


    Mix all together, except chips and cheese.  Put into 9×13 pan and top with the chips & cheese mixture.  Bake in a 350 degree oven until it is all bubbly.  In my oven it takes about an hour.

    I have made this for many occasions, and everybody seems to love it, and wants the recipe.  We had it down in Georgia by Ken’s youngest sis, and fell in love with it.

  • Your recipe sounds good, I think I might try it myself but I need to know if the potato crisps are what we call chips or what we call crisps. The English language sometimes divides us   BTW you are in  ” featured ” did you know ???  Marie

  • I am going to try this and soon.  Maybe for my first family meal with the kids and their parents and uncle and aunt.

    I had to laugh at the story of you and Ken and the phone.  My sons will sometimes call me when they are right around the corner…they love good jokes.

  • So do the chips and cheese make a nice topping for this. I would never of thought of putting soup like that in a salad

  • I kept the recipe with the things you substituted also. I’ll at least do something low fat…like ff soup and cheese and probably substitute the ff crackers for the chips. Thanks!

  • I’ve never made anything like this before.  It sounds tasty!  I’ve copied it and I am going to start a recipe file.  I meant to do this long ago; I’d tell myself I would go back and find every yummy recipe posted, but I’d never be able to do that, so now I am copying as I go along.  About 95% of them are for desserts, so this one is especially welcome.

    Too bad all the family reunions are already over, or I’d have taken this.  I guess there’s always next year!

  • Thanks for the lovely recipe!! Like you, I found I like Miracle Whip Lite a lot better than the mayonnaise. I use it daily on my sandwitch.
